Lemon Almond Polenta Cake (G-Free)

From the first bite, you experience the soft crunchy texture from cornmeal and ground almonds, the fresh flavor of lemon, and moist richness that comes from olive oil. Needing a gluten-free, dairy-free dessert for a client, I adapted one of my favorite cake recipes from Deborah Krasner’s The Flavors of Olive Oil: A Tasting Guide and Cookbook to meet the need. I also turned to Bob’s Red Mill for gluten free cornmeal and flour blend.

Roast Asparagus

I am crazy about asparagus.  I have to apologize to my husband for my love of the emerald green spears of spring. Sometimes he gives me the look of “asparagus again”? Whether roasted, stir-fried, or pureed into soup, asparagus is fast and easy to prepare. It’s also a super healthy choice, low in calories and full of vitamins and fiber. That aside, I just love the taste.

Lemon Ricotta Pancakes & Ginger Syrup from Hawaii

Pancakes may be standard breakfast fare, but made with Ricotta cheese and a zealous addition of lemon zest, they are anything but standard. With a drizzle of homemade ginger syrup, these are possibly the best pancakes, or hotcakes, I’ve ever eaten. In fact, we’ve had them two mornings in a row while staying at the Mauna Lani Bay Hotel on the Big Island of Hawaii.
