Scallop Potatoes

Whether you call them cheesy scallop potatoes, scalloped potatoes, potato au gratin or au gratin potatoes, they are just flat out fantastic. Healthy? Not really. But this recipe is at least healthier, with less fat and calories than the traditional French Potato Dauphinoise. It’s more for that occasional splurge or special dinner.

Fresh Fig and Tossed Green Salad with Honey Balsamic Vinaigrette

With deep purple skin and pink flesh, fresh figs have a unique texture and sweet flavor. Brush them with olive oil and briefly grill in a grill pan. They make a fabulous, healthy addition to a tossed green salad. Grab some at the market and try this terrific salad before fig season is over.

Turkey and Quinoa Stuffed Bell Peppers

Packed with vitamins C, A and E, bell peppers make a great vessel for a savory filling and satisfying dinner. Here’s my updated recipe for stuffed bell peppers with lean ground turkey, nutrition-packed quinoa and tomatoes. I’ve added sweet dried currants, warming spices, plus a little feta cheese for some tang. You can even make the stuffing ahead of time to save time. Notes for dietary options are below.
