This Mediterranean-inspired appetizer tray is easy to assemble and has something for everyone to nibble before dinner. The feta cheese takes just a few minutes and can be served with crackers or thinly sliced baguette. This tray makes a nice light dinner too, when paired with a salad. Add hummus or other favorite things. This recipe doubles easily.
1-2tablespoonsof fresh herbssuch as parsley, oregano, thyme, or mint
A sprinkle of red pepper flakes

6ouncessliced Prosciutto or Specksmoked Prosciutto
1jarmarinated Mediterranean olives
1small bowl of raw almonds
1bunchgrapeswashed and clipped into small clusters
A selection of crackers and pita breador thinly sliced toasted baguette
Instructions
Pre-heat oven to 375°F degrees. Place feta in a baking dish just big enough to hold the cheese. Drizzle with olive oil, herbs, and red pepper. Bake for about 20 minutes or until the cheese it hot. It won’t really melt, but will get soft.
While the cheese is baking, arrange all of your other ingredients on a platter or tray. When the cheese is done, place in a small dish, pour the olive oil from the dish (or a little extra) and herbs over the top and serve.
Notes
Mezze Platter Options
Olives: Black Greek olives (kalamata, get the pitted) or green olives, buy them at the store or marinate your own.
Grapes: Red and green provide nice color.
Meat: Roll some prosciutto, speck (smoked prosciutto), and coppa are my favorites.
Nuts: Almonds, raw or roasted.
Hummus: Homemade hummus is easy to make, or get a store variety.
Meat: Prosciutto pr Speck are good options, roll lengthwise so they are easy to pick up and display on the platter.
Dolmas: Stuffed grape leaves, they comes in cans and jars.
