Watermelon juice mixed with lime and sparkling water make for a refreshing way to beat summer heat. Float a few lime slices in it for garnish.

1smallabout 3 1/2-4 pounds or 2 kilos, mini-size watermelon
1cupof fresh squeezed lime juice250 ml
Sparkling water or sparkling mineral wateras you prefer
Wash watermelon well, then cut into slices and remove the rind. Cut out the pink flesh and puree in a Vitamix or blender. Pour through a fine strainer. Discard the pulp, add lime juice and sparkling water as desired. Serve cold.
