Cool, crisp, refreshing and good for you, this quick salad features the wonderful mini cucumbers called Persians. You may also find them called Lebanese cucumbers at the market. For herbs, mint works perfectly, and you can add dill if you likes lots of fresh herbs.
3tablespoonsfinely chopped red onion
2-3tablespoonsfinely chopped fresh mintdill is good too
1/4– 1/2 cup crumbled feta cheeselook for Redwood Hill Farm, preferably goat feta
1lemonzested then juiced
1tablespoonolive or avocado oil
Salt and pepperto taste
Slice cucumbers lengthwise into quarters. Trim out the fine seed centers if desired, the cut quarters into small pieces on the diagonal. You can also halve the cucumber and just cut into thin half moons.
Add red onion, herbs, feta and lemon zest. Whisk together 1 tablespoon lemon juice and oil and toss with salad. Serve chilled.
