Air Fryer Chicken Patties

These easy air fryer chicken patties are tender, flavorful, and made with simple ingredients—no breadcrumbs or fillers. Just ground chicken, herbs, and a few pantry staples. Perfect for meal prep, quick dinners, or lettuce-wrapped burgers.

Ingredients

  • 1 - 1 ¼ pounds ground chicken thigh dark meat or a dark meat blend
  • 1 small shallot, finely chopped 2 tablespoons, white onion, or onion power ¼ tsp.
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh chopped parsley
  • 1 teaspoon worcestershire
  • ½ teaspoon dried oregano or dill optional
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • avocado spray for the air fryer basket

Instructions

Pre-heat air fryer

  • Preheat your air fryer to 385°F. Spray lightly with avocado spray.

Mix chicken patties

  • In a medium bowl, gently combine all ingredients. Mix just until incorporated—don’t overwork. Wear disposable kitchen gloves if desired. Divide mixture into 4 equal portions. Shape into patties about ½" thick.
    Tip - Keep the ground chicken cold, it's is easier to shape and will cook more evenly.

Air fry

  • Place patties in the basket, leaving space between each one. Air fry for 8 minutes, flipping halfway, until golden and internal temperature reaches 165°F. Let them rest a few minutes before serving.

Leftovers

  • Cooked air fryer chicken patties keep well in the fridge for up to 4 days. Let them cool completely, then store in an airtight container. Reheat in the air fryer at 350°F for 5–7 minutes or until warmed through.

Notes

The nutrition numbers were calculated with ground chicken thigh  (I grind my own), which is about a 90/10 lean to fat ratio. The protein and fat content will depend on what you use, ground thigh, or a ground dark meat and breast mix (93/7). Check the package on what you buy. A leaner grind has lower protein and fat.
To grind your own chicken thighs, buy boneless, skinless chicken thighs and use either an old fashioned hand grinder or do as I do and use a KitchenAid standing mixer with the grinding accessory attachment. It takes 5 minutes and is way better than store ground chicken!
If your store only has the 99% lean, add 1 tablespoon of extra virgin olive oil to the mix to increase the fat and flavor of your chicken patties.
