Greek Yogurt Parfaits with Granola

To make a parfait, layer Greek yogurt, berries, and granola. They taste (and look) more like dessert than breakfast. Build them in jars with lids to make them transportable.

Equipment

  • 4 12-16 ounce jars or glasses

Ingredients

  • 24 ounces plain unsweetened Greek yogurt
  • 6 ounces fresh raspberries 1 container
  • 6 ounces fresh blackberries 1 container
  • 6 ounces fresh strawberries ½ a container
  • 6 ounces fresh blueberries 1 container
  • 6 ½ ounces plain granola, no dried fruit added 1 ½ cups

Optional add-ins

  • 2-3 tablespoons raw honey, maple syrup or keto maple optional
  • 4 tablespoons cocoa nibs optional
  • 1 teaspoon vanilla extract or vanilla paste or more to taste

Instructions

  • Right before using, wash your berries, drain and dry on paper towels. For strawberries, cut off the tops and quarter them or chop them depending on the size. If the blackberries are huge, cut them crosswise.
  • Using 4- 12-16 ounce jars or glasses, layer granola, yogurt, then berries and like in the photo. Repeat for the layers.
    If you are transporting them, use lids to secure the parfaits. If not transporting, cover with plastic and refrigerate. Parfaits can be made a day ahead or the night ahead.

Notes

If you like vanilla flavor in your yogurt, use vanilla extract, ground vanilla beans or vanilla bean paste. Better to add your own vanilla than buy sweetened vanilla yogurt that is loaded with added sugars.
