Tomato Avocado Toast

- 4 large slices artisan bread gluten-free, whole grain or whole wheat
- 1-2 tomatoes
- 1 large avocados or 2 small
- ⅔ cup ricotta cheese
- 1 tablespoon extra virgin olive oil
- 1 lime or lemon
- ½ tablespoon unsalted butter or salted butter
- sea salt as needed
- black pepper as needed
Optional Toppings
- ½ cup microgreens of your choice
- 4 radishes thinly sliced
- ¼ small red onion thinly sliced
Brush bread slices with either olive oil or melted olive oil and butter together. Toast bread crisp under the broiler, air fryer, or toaster.
Peel and seed avocado and mash with a little salt and a squeeze of lemon or lime juice. Top toast with sliced tomatoes and mashed avocado. Top with microgreens or other toppings. Squeeze citrus over the top and season with a little more salt and pepper if desired.
Add-ons for garnishes, color, and flavor:
- Sprinkle with everything bagel seasoning.
- Add finely sliced radishes or carrots.
- Add thinly sliced red onion or pickled onion.
- Try sunflower seeds or pepitas.
- For more protein, serve with eggs, poached, hard boiled, soft boiled, or scrambled.
