Tomato Avocado Toast

Fresh, simple, and endlessly customizable, tomato avocado toast is a quick, healthy breakfast or light lunch made with just a few flavorful ingredients.

Ingredients

  • 4 large slices artisan bread gluten-free, whole grain or whole wheat
  • 1-2 tomatoes
  • 1 large avocados or 2 small
  • cup ricotta cheese
  • 1 tablespoon extra virgin olive oil
  • 1 lime or lemon
  • ½ tablespoon unsalted butter or salted butter
  • sea salt as needed
  • black pepper as needed

Optional Toppings

  • ½ cup microgreens of your choice
  • 4 radishes thinly sliced
  • ¼ small red onion thinly sliced

Instructions

  • Brush bread slices with either olive oil or melted olive oil and butter together. Toast bread crisp under the broiler, air fryer, or toaster.
  • Peel and seed avocado and mash with a little salt and a squeeze of lemon or lime juice. Top toast with sliced tomatoes and mashed avocado. Top with microgreens or other toppings. Squeeze citrus over the top and season with a little more salt and pepper if desired.

Notes

Add-ons for garnishes, color, and flavor:
  • Sprinkle with everything bagel seasoning.
  • Add finely sliced radishes or carrots.
  • Add thinly sliced red onion or pickled onion.
  • Try sunflower seeds or pepitas. 
  • For more protein, serve with eggs, poached, hard boiled, soft boiled, or scrambled.
