These easy Thanksgiving green beans are a colorful, fresh alternative to green bean casserole, topped with savory sautéed shallots, crunchy toasted pecans, and sweet-tart pomegranate arils. Best of all, most of the prep can be done 1-2 days ahead, leaving you with one less thing to manage on Thanksgiving Day.

I grew up with green bean casserole too, but with so many rich dishes on the Thanksgiving table, I prefer a fresher, lighter green bean side. Haricots verts (French green beans) are one of my favorite vegetables-they're slender and tender, cook quickly, and pair beautifully with sweet sautéed shallots, crunchy toasted pecans, and tart, juicy pomegranate arils. The pomegranate adds a bright pop of flavor and color that makes these green beans feel especially festive for the holiday table.
Recipe Snapshot
- Easy: Simple ingredients and straightforward preparation.
- Make-ahead: Prep the beans and shallots 1-2 days ahead.
- Fresh & colorful: A lighter alternative to traditional green bean casserole.
- Holiday-ready: Pecans and pomegranate add crunch, flavor, and festive color.
Ingredients You'll Need
- Green beans: Tender French green beans, called haricots verts, are my first choice, but regular green beans work too.
- Olive oil: Use a good extra virgin olive oil for sautéing the shallot and garlic. Avocado oil works too.
- Shallot and garlic: Shallot adds mild, slightly sweet onion flavor, while garlic adds a savory note.
- Pecans: Toasted pecans add richness and crunch. Walnuts or hazelnuts are good alternatives.
- Pomegranate arils: Their tart-sweet flavor and ruby-red color make the green beans especially festive for the holiday table.
How to Make Easy Thanksgiving Green Beans

- Cook green beans in a large pot of salted, boiling water just until tender, about 5 minutes.

- Immediately remove the green beans to an ice bath to shock and stop the cooking process, and set the color.
3. Cook the shallot and garlic. Sauté the shallot in olive oil until soft, add garlic, season with salt and pepper.
4. Combine and serve. Add the green beans to the skillet with the shallot mixture and toss over medium-low heat just until warmed through.
Transfer to a serving platter ro shallow casserole and finish with the toasted pecans and pomegranate arils. Serve hot.
Make Ahead Tips
These Thanksgiving green beans are ideal for making ahead. Blanch, chill, drain, and dry the beans, then refrigerate in an airtight container for up to 2 days. Sauté the shallot and garlic and refrigerate separately.
Toast the pecans ahead and store them in an airtight container at room temperature. The pomegranate arils can also be prepped ahead and refrigerated. With everything ready, all that's left before dinner is reheating and garnishing the beans.
How to Reheat
Remove the green beans from the refrigerator about 60 minutes before serving to take off the chill. Transfer them to a shallow casserole dish and top with the cooked shallot and garlic. Cover with foil and reheat in a 350°F oven until hot, about 10-15 minutes. Test and heat a bit longer if needed.

Serving Suggestions
These green beans pair beautifully with Thanksgiving classics like mashed potatoes, gluten-free stuffing, cranberry sauce, and roast or smoked turkey. Their fresh flavor and crisp-tender texture are especially welcome alongside richer holiday dishes.

Instructions
Set up
- Fill a large mixing bowl ½ full of ice, then with cold water to cover and set near the stove. Bring a large pot of water to a full boil. Add 1 tablespoon of kosher salt per quart of water for blanching.
Cooking and chilling
- Blanch the green beans in boiling salted water for 4-5 minutes, depending on their thickness. Slender beans may take less time. To test, remove one bean, quickly dip it in the ice water and take a bite. It should be tender but still have a little bite. When done, immediately transfer the beans to the ice bath to stop the cooking. Drain and dry well.
Sautéing the shallots
- Place a medium sauté or fry pan over medium low heat. Add 1 tablespoon of olive oil. When oil is warm, add the shallot. Cook the shallots until soft and golden, stirring so they do not burn and adjusting heat as needed, 8-10 minutes. Add the garlic and cook 1 minute longer. Either refrigerate until serving or leave at room temperature, covered, if doing right before dinner.
Finish and serve
- If made ahead, remove the green beans from the refrigerator about an hour before serving to take off the chill. Place in a shallow baking dish, cover with foil, and warm in a 350°F oven for 10-15 minutes, or until heated through. Gently reheat the shallots if refrigerated. Transfer the warm beans to a serving platter, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Top with the shallots, chopped pecans, and pomegranate arils. Serve warm.
