    Cucumber Juice with Kale and Lemon

    With a new juicer in my kitchen, I'm concocting all kinds of healthy juice recipes. Loaded with nutrition, here's my green juice recipe with cucumber and kale. Make it with kale, cucumber, pear or apple, lemon and cilantro. Try it for energy, detoxing, and a boost of vitamin C.

    Eating lots of fruits and vegetables is key to achieving and maintaining optimal health while reducing the risk for many diseases.  Eating whole fruits and vegetables is best, because you get the fiber. But consuming enough fruits and vegetables daily can be challenging. Juicing is an easy way to add powerful, plant-based nutrition to your diet.

    Juicing as a Dietary Supplement

    Juicing supplements the whole fruits and vegetables in your diet. Think of juicing as a boost for your digestive health, immune system and more. Juicing provides liquid nutrients that are quickly absorbed by your body,  so you still need to get enough fiber in your diet by eating whole fruits and vegetables.

    Natures Farm-acy

    Fruits and vegetables are like natures pharmacy - or you could say spell it "farmacy".  They are loaded with vitamins, minerals, phytonutrients, and are powerful tools in fighting disease. We can't get enough of them. Use juicing to boost your fruit and vegetable intake.

    Researching the nutritional benefit of each ingredient was amazed by what I discovered. This green juice:

    • Helps our bodies flush out environmental toxins from pesticides, heavy metals, and air pollution
    • Packs a vitamin C punch for detoxifying and cleansing
    • Improves circulation, supports digestion and cardiovascular health, enhances brain function
    • Reduces the negative effects of stress, and provides anti-aging and anti-inflammatory benefits
    • Boosts energy

    Juicing at Home

    Some commercial juices contain added sugar and preservatives. Making juices at home you get the best for your body. Be sure to drink it as soon as possible as the nutritional power slides as it sits.

    Juicing and blending are both good, they're just different. I do both. For more information on juicing versus blending read this.

    Health Notes

    If you have thyroid issues, check with your health practitioner about eating raw kale. Lightly steamed kale versus raw may be better. Also, if you are on blood thinner medication, check with your doctor about consuming kale as it has vitamin K, which can mess with your medication.

    Cucumber Juice with Kale and Lemon

    Loaded with fresh fruits and vegetables, this nutrition-packed green juice provides a load of vitamin C, K, manganese, phytonutrients, anti-inflammatory nutrients and anti-disease nutrients. I use organic produce for my juices to reduce the pesticide load and use a Breville Elite Juice Fountain. Yield: about 1 quart (1 liter)

    Ingredients
      

    • 1 green pear or green apple
    • 4 Persian cucumbers or one English cucumber
    • 4 large celery ribs
    • 8 leaves green kale
    • 1-2 lemons
    • ½ bunch cilantro
    • 1-2 kiwi

    Instructions
     

    • Wash all produce well. Juice your fruits and vegetables according to the manufacturer directions.
    • Whisk the juice together if needed to incorporate  and enjoy immediately for optimal nutrition.

    Notes

    I use Meyer lemons, which are thin skinned, so I do not peel them. If you use regular lemons, you may want to peel them first, but I do not, as the lemonine is in the lemon peel.
    Limonene acts as an antioxidant in the body, absorbing and removing damaging free radicals before they can injure cells. Check the manual of your juicer about lemon rind.

      My family was just discussing how we think food is medicine. I did not know raw kale and thyroid were related. I just found out that soy and thyroid can be an issue, and now kale.

      On a more trivial not, those juice glasses are beautiful. Would you share where we can buy them? I have been taking note that when I serve something in a beautiful dish everyone thinks is taste better lol.

      We bought a Hurom masticating juicer for ourselves before Christmas and we've been juicing ever since. One of our favorite things to add to any juice is raw ginger. We love the heat/spice it gives.

      If you have an Android phone, there is a great app for juicing called Juice Rx. The basic app is free, but you can upgrade it for just a couple bucks and that is well worth it. It gives you a searchable database of juice recipes by ingredient or what ails you. In other words, you can search "migraines" and up will pop recipes that are supposed to help with that condition. You can do a search with "spinach" and you'll get all the recipes that have spinach in them, and the recipes include the caloric count, as well.

      I so agree with you I juice as well and believe me I feel the dif. I have RA and it has been a major help. Unfortunately my Rheumatolgist says food doesn't improve the illness, I beg to differ. I hope we see more recipes to come. Thank you!
