    Ever juice cabbage? This crisp green cabbage juice pairs cabbage with celery for a clean, refreshing flavor and beautiful pale green color. If you enjoy celery juice or green juice, this simple cabbage juice recipe is an easy one to add to your juicing routine. Cabbage is naturally rich in nutrients and makes more than great coleslaw and tacos.

    This green cabbage juice became a new go-to almost by accident. One day I was making celery juice and ran short on celery, but had a big head of green cabbage in the refrigerator. I'd never juiced cabbage before, but thought, why not? It turned out crisp, clean, and surprisingly refreshing.

    Cabbage Juice Recipe Snapshot

    Ingredients You'll Need

    Cabbage is a member of the cruciferous vegetable family like kale, broccoli and cauliflower and you know how good these veggies are for you.

    • Cabbage - Use green cabbage for this juice.
    • Celery - Blends nicely with the cabbage, lemon and green apple.
    • Green apple - I buy Granny Smith apples for juicing as they are lower in sugar than other apples with a nice tart flavor.
    • Lemon - Leave the lemon peel on if thinner skinned. There is beneficial limonene in the peel that is not in the lemon juice.
    • Ginger (optional) - A small piece of fresh ginger adds a little zip and warmth to the juice. Start with a small amount and adjust to your taste.

    Chef's tip - Be sure to buy organic produce for juicing. If that is not possible be sure to check the EWG's list for the Dirty Dozen and Clean Fifteen for pesticide levels.

    How to Make Cabbage Juice

    Wash all of your produce and get it ready to juice when you get home from the market, then you'll get your juice made faster. Simply process according to your brand of juicer manufacturer directions.

    • Cut the cabbage head into quarters, then into smaller chunks if needed for the feed tube of your juicer.
    • Chop off celery leaves as they can taste bitter.
    • Core and seed the apple, then quarter it.

    Chef's tip - Don't Peel Lemons. Some people peel lemons for juicing; I do not. Limonene is a chemical found in the peels of citrus fruits and in other plants that you want to consume. If the lemon has a heavy skin, slice off the ends before juicing.

    The Health Benefits of Cabbage Juice

    Cabbage juice has a long history of being studied for digestive health, especially in relation to peptic ulcers. Older studies looked at raw cabbage juice, sometimes referred to as "vitamin U," and reported promising results for ulcer healing.

    Peptic ulcers are often linked to Helicobacter pylori infection or long-term NSAID use. If you're dealing with ongoing stomach pain, bloating, burning, or digestive symptoms, work with your healthcare provider to understand the cause and appropriate treatment.

    Serving and Storage

    This recipe makes 2-18 ounce servings or 4 smaller ones. Juice is best consumed right after preparing. I love it at room temperature, right out of the juicer, but see the tip below.

    Chef's Tip: Depending on your juicer brand, you can keep the fresh juice tightly capped in bottles with no air between the cap and juice level for 24-72 hours. If it's a little low, fill with filtered water to top it off. See your juicer brand guidelines. For juicers, I use both the Slowstar and the Greenstar Elite from Tribest. Both models are slow masticating juicers that get the most out of your produce. If you love to juice, these machines are a worthwhile investment.

    Ingredients
      

    • 1 large head green cabbage approximately 1 pound
    • 1-2 heads celery 1 ½ pounds
    • 1 green apple cored and seeded
    • 1 small lemon or ½ a larger lemon
    • 1 small knob of ginger optional, peeled

    Instructions
     

    • After washing all produce, chop into pieces that fit through your juicer's feed tube. Cut the lemon small and discard seeds. Process vegetables through your juicer according to the manufacturers directions for your particular juicer.
      It's best enjoyed right away but may last refrigerated for up to 72 hours. See your juicer's guidelines.

    Notes

    It's best to buy organic for juicing, especially as celery usually shows up on the Dirty Dozen list for high pesticides. Cabbage is usually way down the list but I still recommend organic if possible.
