    Green Juice with Cabbage and Celery

    Ever juice cabbage? This beautiful green juice with cabbage also has celery juice. Celery juice and cabbage juice are a great pairing with a crisp, clean, almost sweet flavor and a beautiful light green color. And with the health benefits of cabbage juice, this is one healthy healing juice. If you're a fan of celery juice and green juice, add this recipe to your juicing routine. Cabbage: it's for more than coleslaw and tacos!

    This green cabbage celery juice is my new go-to green juice. One day I was making celery juice and ran out except for a big head of green cabbage. I'd never juiced cabbage but thought, why not? Try it. Cabbage is for more than coleslaw, sauerkraut, taco filling, and stir fry (but it's good there too).

    Recipe Ingredients

    Cabbage is a member of the cruciferous vegetable family like kale, broccoli and cauliflower and you know how good these veggies are for you.

    Please see recipe card for measurements.

    • Cabbage: use green cabbage for this juice.
    • Celery: Blends nicely with the cabbage, lemon and apple, and buy organic.
    • Green apple: I buy Granny Smith apples for juicing as they are lower in sugar than other apples with a nice tart flavor.
    • Lemon: Leave the lemon peel on if thinner skinned. There is beneficial limonene in the peel that is not in the lemon juice.

    Recipe Instructions

    Wash all of your produce and get it ready to juice when you get home from the market, then you'll get your juice made faster. Simply process according to your brand of juicer manufacturer directions.

    • Cut the cabbage head into quarters, then into smaller chunks if needed for the feed tube of your juicer.
    • Chop off celery leaves as they can taste bitter.
    • Core and seed the apple, then quarter it.

    Some people peel lemons for juicing; I do not. Limonene is a chemical found in the peels of citrus fruits and in other plants that you want to consume. If the lemon has a heavy skin, slice off the ends before juicing.

    The Health Benefits of Cabbage Juice

    Studies recognize cabbage juice, referred to as vitamin U, for it's effectiveness in normalizing gastric and intestinal function. It's healing for peptic ulcers commonly caused by a Helicobacter pylori bacterial infection in the digestive system.

    The H. pylori bacteria attacks the stomach lining and in some people leads to ulcers and an inflammatory condition called gastritis. As someone who's had an H. pylori infection, it's not something I'd wish on anyone. I experienced crippling stomach aches, bloating, burping, and other unpleasant symptoms.

    If you're experiencing ongoing intestinal problems, please work with your healthcare provider to understand what's causing the problem and find treatments options.

    Juicing Tips

    It's best to buy organic for juicing, especially as celery usually shows up on the Dirty Dozen list for high pesticides. Cabbage is usually way down the list but I still recommend organic if possible. I use Eat Cleaner to safely wash my produce.

    Serving and Storage

    This recipe makes 2-18 ounce servings or 4 smaller ones. Juice is best consumed right after preparing. I love it at room temperature, right out of the juicer, but see the tip below.

    Chef's Tip: Depending on your juicer brand, you can keep the fresh juice tightly capped in bottles with no air between the cap and juice level for 24-72 hours. If it's a little low, fill with filtered water to top it off. See your juicer brand guidelines.

    For juicers, I use both the Slowstar and the Greenstar Elite from Tribest. Both models are slow masticating juicers that get the most out of your produce.

    Juices made with the Slowstar hold for 24 hours in the refrigerator and up to 72 hours for the Greenstar with minimal loss of nutrition. If you love to juice, these machines are a worthwhile investment in both time and money.

    For Histamine Intolerance

    As citrus is high in histamines, you can leave it out. It does have a better flavor with it and lemon lifts the flavor. I am ok with this this juice but do what works best for you.
